Directions:
- Cut the potatoes into wedges and place them in a bowl with salt and boiling water. Cover and let them soak for 30 minutes.
- In a separate bowl, mix the Parmesan cheese, black pepper, and bread crumbs.
- Drain the potatoes and season them with olive oil. Roll the potato wedges in the breadcrumb mixture until well coated.
