This is something my aunts used to whip up, and I thought it was long gone. Surprise! I found it, and it’s even more delicious.

Directions:

  1. In a medium mixing bowl, beat the softened cream cheese until smooth.
  2. Gradually add the powdered sugar and vanilla extract, continuing to beat until well blended and creamy.
  3. Gently fold in the whipped cream until fully incorporated.
  4. Pour the mixture into the prepared graham cracker crust, spreading it evenly.
  5. Refrigerate for at least 3 hours or until firm.
  6. Before serving, top with fresh berries or fruit compote if desired.

Variations & Tips:

  • For a citrusy twist, add a tablespoon of lemon or lime juice and zest to the cream cheese mixture.
  • Drizzle melted chocolate over the top for a more decadent flavor.
  • Experiment with using a chocolate or shortbread crust instead of graham cracker for a different take.
