Instructions:
- Preheat your oven to 300°F (150°C).
- In a large bowl, whisk together the sugar, eggs, cornstarch, flour, and salt until well combined.
- Stir in the melted butter, then gently fold in the pecans, crushed pineapple, and grated coconut.
- Fit the pie crust into a round baking dish and pour the pecan mixture over it. Trim and crimp the edges of the crust as desired.
- Bake the pie in the preheated oven for 55 minutes, or until it is mostly set.
- Cover the pie with aluminum foil and bake for an additional 15-20 minutes, or until the filling is firm in the center.
- Remove from the oven and let it cool completely.
- Before serving, garnish with whipped cream and toasted coconut if desired.
