Pecan Pie from an Island

Instructions:

  1. Preheat your oven to 300°F (150°C).
  2. In a large bowl, whisk together the sugar, eggs, cornstarch, flour, and salt until well combined.
  3. Stir in the melted butter, then gently fold in the pecans, crushed pineapple, and grated coconut.
  4. Fit the pie crust into a round baking dish and pour the pecan mixture over it. Trim and crimp the edges of the crust as desired.
  5. Bake the pie in the preheated oven for 55 minutes, or until it is mostly set.
  6. Cover the pie with aluminum foil and bake for an additional 15-20 minutes, or until the filling is firm in the center.
  7. Remove from the oven and let it cool completely.
  8. Before serving, garnish with whipped cream and toasted coconut if desired.
