Instructions:

  1. In a large bowl, whisk together the flour, sugar, baking powder, salt, and cinnamon.
  2. In a separate bowl, whisk the eggs, then add the milk and vanilla extract, stirring until well combined.
  3. Gradually mix the wet ingredients into the dry ingredients, stirring until just combined. Be careful not to overmix.
  4. Gently fold in the chopped peaches until evenly distributed.
